Day 2 What to blog...maybe I'll just talk about what I cook...

OK, so I made muffins from the Skinny Bitch in the Kitch. Cherry Almond. 1st attempt at using the ener-g egg replacer. Mixed results. It was a little dry, not too sweet, and not very brown even though I used whole wheat pastry flour and organic sucanut.
If I bought this muffin and ate it, I would think "good vegan muffin." But I don't want a good vegan muffin, I want a good muffin. My taste testers at work didn't seem to mind (biggest complaint was some insane person who doesn't like cherries) so on the whole it was well received and touted as cholesterol free.

I have always wanted to try the egg replacer in a recipe but I guess I was always a little scared about how the results will turn out. I just got the book Skinny Bitch in the Kitch so I will have to give one of the dessert recipes a try. Sounds like a perfect idea for inexpensive Christmas gifts for co-workers!
